Shopping, Superfood Info & Sushi Recipe

Boy am I ready for Spring! Summer!! I'm positive everything here will be lush and green... it rains so much! I'm sure it's beautiful. I suppose I will just have to wait and find out :)

Thankfully, yesterday I went on a bit of a shopping adventure and got some awesome goodies:


Found a little tiny Health Food shoop here, I was super excited to find these. Dulse, Coconut Aminos, Maca Powder, Raw Chocolate bar & FREE sprouts!

I've been meaning to get the dulse, aminos & maca powder for quite a while. They have some tremendous health benefits!
Dulse is a sea vegetable. It's apx 22% protein and a handful worth provides 66% a daily intake of B-12 and more than 100% of your daily intake of B6 & Iron.
Coconut Aminos was purchased because being allergic to soy, I can't have Soy Sauce! Soy Sauce is used in so many stir fry/vegan recipes that it is really hard to go without when preparing a meal. I've been trying to stick to balsamic... but it's just not the same. I'm actually a huge coconut fan. Not only does it taste good but it is absolutely amazing for you. I even replaced my lotion with coconut oil. Seriously.. It's a great body/hand/face lotion. Coconuts are super high in fat but your body burns it up very quickly and it doesn't turn into stomach fat (like animal fat foods & simple sugars, etc. turn to)
Maca Powder .. is essentially amazing. Here's what the package reads: "This amazing adaptogenic root helps nourish the endocrine system, enhances the ability to deal with stress and boosts energy, endurance, strength and performance. Peruvian research claims that maca improves memory, increases oxygen in the blood, improves the function of neurotransmitters, and increases libido. "

I also went to Trader Joe's where I picked up:
 
The sparkling water is to mix with pomegranate & cranberry juices. I'm giving up wine for a bit, and it will be the substitute. The beets are for some Vegan Red Velvet Cupcakes I will be making this week for Joe :)


I actually got this a couple of days ago, but it is just as exciting and new to me today :) I plan on making some vegan doughnuts this weekend!! Stay tuned this weekend for lots of pretty doughnut pictures!

I also bought some SUNflower's <3 (Thank you Trader Joe's!)
I'm determined to lighten up the house on these rainy days. I don't want the whether to impact my mood. (Starts to happen after days and days of rain. I need my sunshine!)

Yeah, yesterday was pretty fantastic. Especially.. Dinner!
I made Honey Lime Glazed Tofu w/ Strawberry Peach Salsa and Spanish Quinoa.

It was DELICIOUS!!

Raw Vegan Sushi!

Recipe makes 3 rolls

For the 'rice'
1/2 head of cauliflower, chopped
1/2 c jicama, chopped
A couple shakes of sea salt
3 T agave nectar
 1/4 c rice vinegar

Process all ingredients in food processor/chopper until it has a rice like/crumbly consistency. Do not over process or it will turn into a mashed potato type of substance. Pulse it.

For sushi/filling
3 Raw Nori Sheets
9-10 shiitake mushrooms
julliened cucumber
sliced avocado
sprouts


One at a time, Lay out Nori sheet and pat 'rice' onto sheet. Slice shiitake' mushrooms in half and lay them in a straight line on the 'rice.' Lay cucumber, avocado and sprouts. Roll the nori over, and continue until your sushi roll is complete. Damp fingers and touch the edges of the nori sheet to get it to stick together. With a sharp knife (and very carefully) slice each roll into 6-8 pieces. Plate & serve. (and eat!)
